Beetroot & Mint Houmous
Bright & full of healthy fibre...
I love beetroot and mint dip, this is thickened with chickpeas so it is a houmous. It can be spread on toast or used as a dip.
Beetroot has lots of fibre, it’s a good source of vitamin C, B6 and B9 (folate) and minerals like iron and potassium. It’s also been reported to help in sports, as it gets more oxygen in the blood. You need beetroot 2-4 hours before your sport for this and has been found to work best for those not so highly trained.

I still just think its yummy though! Any white bean drained can used in place of the chickpeas and roasted beetroot is great if you have fresh beetroot to use.​
Ingredients
350g cooked beetroot crushed or chopped in quarters
1 tin chickpeas drained
1 large clove garlic
3/4 tbsp cream cheese or Greek yogurt
Handful fresh mint
1. Reserve a few mint sprigs. Place everything else in a blender and pulse until smooth.
2.Serve in any way you wish and garnish with reserved mint sprigs. I served mine on Swiss style musli bread toasted, a side salad and avocado.
