Mum's Yummy NYE Curry

My mum sent a chickpea and sweet potato curry down for my lonely NYE during lockdown. It was amazing, I just had to get the recipe to share with you!

Ingredients

1 tbsp oil

1 large onion, finely chopped

3 tbsp Patak's tikka curry paste 

2 tin chickpeas

2 tin tomatoes

2 medium sweet potato, cut into small cubes

3 tbsp natural or Greek yogurt

Few good handfuls baby leaf spinach

​

1. Fry off the onion in the oil over a medium heat until well softened. Add curry paste and fry for a minute or two, until the spices aroma released.

​

2. Add chickpeas, tin tomatoes and sweet potato, stir and bring to a simmer, cooking gently until potato is cooked. Add some water if needed.

​

3. Stir in yogurt and spinach, when spinach has wilted, serve curry over warm rice and enjoy!
