Chocolate, Banana & Walnut loaf

Have we got over the banana bread in lockdown yet? I suddenly fancied it again when I saw some over ripe bananas in the fruit bowl the other day….. so I set out on making something a little different, something still gorgeously tasty, but with some extra nutritious ingredients.
So we have......dark chocolate chips and cocoa for anti-oxidants, walnuts for brain and heart healthy omega-3, more anti-oxidants, vitamins B6, B9 and E and lots of minerals 🥰🥰 Plus with the bananas, walnuts and wholemeal flour, we have lots of gut loving fibre and made with rapeseed oil, its moist and low in saturated fat 🥳
A little indulgence doesn’t have to bad for you ❤️
Ingredients
1 1/2 cup wholemeal flour
1/4 cup cocoa
1.5 tsp baking powder
1 tsp cinnamon
0.5 tsp salt
1/4 cup chopped walnuts
1/4 cup dark chocolate chips
4 bananas
2 eggs
1/3 cup rapeseed oil
1/3 cup maple syrup
1/2 cup Greek yogurt (I used 0% but any would be fine)
1 tsp vanilla extract
Method:

Preheat oven to 160/180/gas mark 4.

Mix all the dry ingredients together, saving a few nuts and choc chips for decoration.

Mix all the wet ingredients (except 1 banana) together in a larger bowl, using an electric hand whisk or liquidiser.

Gently fold dry ingredients into wet.

Pour into a lined loaf tin and smooth over top. Split remaining banana length ways and place on top. Decorate with remaining nuts and choc chips. I put a little sprinkling of brown sugar over the nuts and banana which was very nice 👌

Place in oven for 50 mins and then check with skewer every 5 mins until skewer comes out with no batter on.

Leave in tin to cool for 20mins.
