Energy Balls

Delicious & nutritious......

These balls are full cacao, dark chocolate and nuts, which make them great nutrient dense little snacks. They are a perfect evening treat the night before a big training session or a long race, fueling your body the energy it needs to go the distance.

Ingredients

1 cup dates - pitted - Medjool or Neglet Nour 

3/4 cup rolled wholegrain oats

6 tbsp peanut butter

1 tbsp ground flaxseeds or other ground seeds

Pinch salt 

3 tbsp ground cacao 

30g Dark chocolate 75% cocoa or above

.

1. Blitz dates in the food processor first before adding the rest of the ingredients, except chocolate, and blitzing again.

2. Chill the mix for 30 mins and then roll into 16 one inch balls, place on a lined tray and chill again

​

3. Melt dark chocolate in microwave in a small pot in 20sec blasts, stirring after each one until melted.

​

4 Use a fork to lower some of the balls in to coat in chocolate and place back on greaseproof paper. Decorate remaining balls with left over chocolate.

5 These can be stored in the fridge for a week or so, or frozen until needed.
