Green Goddess Pasta
Serve with crusty garlic bread.........
This delicious, fresh and oh so tasty comfort food pasta dish is hiding a secret.......its really, really, healthy. Like heart healthy, cholesterol lowering, menopause supporting, gut health supporting, immune system supporting, hormone balancing healthy. But best of all its really, really easy and quick, so its stress level healthy too. I'm hearing trumpets announcing the arrival of this pasta its so great!!

Plus if heated gently, its great the next day for a healthy stress free lunch at work too! Don't forget to take a nice slice of wholemeal bread to toast and butter to go with it too.....
I've made this with green pea pasta for extra protein, talk about getting your greens in, no wonder its so healthy!

The flavour is so fresh and herby with lemon juice and zest cutting through, its great for a summer glute of herbs. Feels free to mix up herb amounts depending on what you have available or prefer.
Ingredients

Makes 3-4 portions

1 large shallot or half an onion

5 Cloves Garlic

3 tbsp cold pressed rapeseed or olive oil

4 slices sourdough, or other, wholemeal bread

1 cup cashews
-
1 cup baby-leaf spinach
-
1 cup fresh flat parsley
-
1/3 cup fresh dill
-
1/4 cup fresh chives
-
1/4 cup fresh tarragon, or 1 tbsp dried

Few sprigs fresh mint

2 cups soy milk, or other milk
-
Zest & juice of one lemon
-
1 heaped tbsp capers

250-300g green pea pasta

1. Place cashews in a heat proof bowl, cover well with boiling water, place a plate over the top and leave to soak for 30 mins.
2. Finely dice shallot and mince 3 cloves of the garlic, roughly chop the other 2 cloves.

3. Chop a small sprig of parsley, mix with 2/3 of the minced garlic and 2 tbsp of the oil in a little pot. Brush or lightly spoon on to the slices of bread, place on a baking tray ready to cook and preheat your oven or air fryer to 200.

4, Place medium pan on medium heat and fry shallot until transparent with remaining oil.

5. Meanwhile, place a large pan of boiling water ready for pasta. Place nuts, spinach, herbs, milk, lemon juice and zest and capers in a blender, season well with salt and fresh ground pepper. Blend until smooth.

6. Add remaining minced garlic to onions and stir for 30 seconds.
​
7. Put garlic bread in oven or air fryer to cook for 10 min.
​
8. Pour pasta into boiling water, cover with a lid and cook according to packet instructions.
​
9. Add beautiful green blender sauce to shallots and garlic, stir and heat gently without boiling, turning down the heat as necessary.

10. When cooked, drain pasta and stir into sauce, serve in a warmed bowl with crunchy garlic bread and snuggle up to enjoy.
