Fluffy Little Pancakes
Ingredients
1 ripe banana broken into chunks
1 egg
0.25 cup plain flour
0.25 cup ground almond
0.25 cup milk - any type
0.5 tsp baking powder
Oil for frying
1. Heat a non stick frying pan over a medium high heat.
2. Break banana into pieces and place with all ingredients in a tall sided bowl or a jug.
3. Beat with electric whisk until smooth.
4. Add oil of choice to pan, swirl round to coat and tip excess into suitable small container to pour back for next pancake, I use a ramekin.
5. For 4 round pancakes pour a ¼ cup of the mix in the pan, cook for a few minutes until bubbles appear on the surface, flip and cook the other side until golden brown. Try your hand at shapes too. Kids love them!
6. Repeat with other pancakes, keeping cooked pancakes warm. I use a folded piece of kitchen roll to also absorb excess grease.
These really easy yummy banana and almond pancakes, they are delicious and help me get my boys day off to a good start. Sometimes I have them too! Just add some fruit and dark chocolate for some extra nutrients.
