Strawberry Salsa

Sweet & spicy.........

Well this lovely colourful number is a little different!

 

A great way to use up a glut of strawberries in something interesting, a lot of sweet. a little sour and a kick jalapenos, yum, yum, yum!

This recipe is nice and quick, just chopping, stirring and serving.

​

I took this into the office and my colleagues couldn't resist having a little taste it is so unusual! I left with lots of requests for the recipe, so here it is....

Ingredients

Makes enough for 4-6 people as a snack

​

1 pint of strawberries, hulled and diced

Half a red onion, finely chopped

1 Jalapeno finely sliced, I use 8-10 slices from a jar

Half a small bunch of coriander, finely chopped

1 lime

1 tsp honey

Pinch salt

Freshly ground black pepper

 

1. Add Strawberries, onion, jalapenos and coriander to a bowl.

2. If your strawberries are very ripe and soft, use the zest from the

lime. If they are not as ripe use the juice, mix and leave to soften for

10-15 min.

​

3. Add honey, mix, season to taste with salt and pepper, add some

lime juice or zest if needed (which ever you didn't use before).

​

4. Serve fresh with tortillas for dipping.
